Description
This Christmas chicken salad with kale and apples is festive, fresh, and satisfying. Made with tender chicken, crisp kale, sweet apples, crunchy nuts, and a maple Dijon vinaigrette, it’s perfect as a holiday side or light main.
Ingredients
4 cups kale, stems removed and thinly sliced
2 cups cooked chicken, shredded or sliced
1–2 crisp apples, thinly sliced
1/2 cup toasted walnuts or pecans
1/3 cup dried cranberries or pomegranate arils
1/3 cup crumbled goat cheese or feta (optional)
For the dressing:
3 tbsp extra virgin olive oil
2 tbsp apple cider vinegar
1 tbsp Dijon mustard
1–2 tsp pure maple syrup
Salt and black pepper to taste
Instructions
1. Wash and dry the kale thoroughly
2. Massage kale with a little olive oil and salt for 1–2 minutes
3. Whisk olive oil, vinegar, Dijon, maple syrup, salt, and pepper
4. Add chicken and kale to a large bowl
5. Toss gently with most of the dressing
6. Fold in apples, nuts, and dried fruit
7. Top with cheese and serve immediately or chill briefly
Notes
Kale can be dressed ahead for meal prep
Add apples just before serving to prevent browning
Great as a main or festive side dish
