This Chicken Taco Salad Dinner is fresh, hearty, and full of bold taco flavors. With juicy seasoned chicken, crisp lettuce, avocado, veggies, beans, corn, and crunchy tortilla strips, it’s the perfect balanced dinner that feels fun and satisfying.
Ingredients
2 cups chopped romaine lettuce
4–5 oz cooked seasoned chicken (grilled, sautéed, or baked)
1/4 cup black beans
1/4 cup corn kernels
1/4 cup diced tomatoes
2–3 Tbsp shredded cheddar or Mexican cheese
1/2 avocado, sliced
Small handful tortilla strips or crushed tortilla chips
2 Tbsp creamy taco dressing or lime vinaigrette
Instructions
1. Season chicken with taco spices and cook in skillet, oven, or grill
2. Chop romaine lettuce into bite-sized pieces
3. Prepare toppings: dice tomatoes, slice avocado, rinse beans and corn
4. Assemble salad: start with lettuce, then veggies, beans, and corn
5. Slice cooked chicken and place on top while warm
6. Add avocado, cheese, and tortilla strips
7. Drizzle with taco dressing and serve immediately

Use chicken breast or thighs depending on preference
