Description
A fresh and high-protein American salad made with grilled chicken, crisp vegetables, avocado, eggs, tomatoes, and blue cheese, topped with a bright vinaigrette.
Ingredients
3–4 cups chopped romaine or mixed greens
1 to 1.5 cups cooked chicken breast, chopped
1 cup cherry tomatoes, halved
1 medium avocado, sliced
2 hard-boiled eggs, halved
1/4 cup blue cheese, crumbled
1/2 cup sliced cucumber
Salt and pepper to taste
Optional: 1–2 strips bacon
Dressing:
3 tbsp olive oil
1.5 tbsp red wine vinegar
1 tsp Dijon mustard
1 garlic clove minced
Salt & pepper
Instructions
1. Chop the lettuce.
2. Cook and chop the chicken.
3. Slice tomatoes, avocado, and cucumbers.
4. Peel and halve the eggs.
5. Layer ingredients on top of the greens.
6. Whisk dressing ingredients.
7. Season with salt and pepper.
8. Drizzle dressing before serving.
Notes
Store ingredients separately for meal prep.
Use rotisserie chicken for faster prep.
Replace blue cheese with feta for lighter version.
Add berries or corn for seasonal variations.
