Ingredients

3 medium apples (Fuji, Honeycrisp, or Gala)

34 medium carrots (washed, ends trimmed)

1 medium beet (scrubbed, skin on if organic)

12 inches fresh ginger root

Optional: lemon juice to brighten flavor


Instructions

1. Wash apples, carrots, beets, and ginger thoroughly.

2. Cut apples and beets into wedges; trim ends of carrots and ginger.

3. Juice ingredients, alternating soft apples with harder carrots and beets.

4. Taste and adjust sweetness or spice as desired.

5. Serve immediately over ice or chill for 20–30 minutes.
