This honeycrisp apple broccoli salad is crunchy, creamy, and crave-worthy. Made with crisp apples, fresh broccoli, dried cranberries, toasted nuts, and a light yogurt-mayo dressing, it’s perfect for meal prep, potlucks, or an easy lunch.
Ingredients
5 cups broccoli florets
2 Honeycrisp apples, sliced
1 cup shredded carrots
1/4 cup red onion, thinly sliced
1/2 cup dried cranberries
1/2 cup toasted almonds or sunflower seeds
1/2 cup crumbled feta or cheddar (optional)
For the dressing:
1/2 cup mayonnaise
1/2 cup plain Greek yogurt
3 tbsp apple cider vinegar
1–2 tbsp honey or maple syrup
1 tsp Dijon mustard
Salt and black pepper to taste
Instructions
1. Wash and dry broccoli florets thoroughly
2. Slice Honeycrisp apples just before assembling
3. Combine broccoli, apples, carrots, onion, cranberries, and nuts in a bowl
4. Whisk mayonnaise, yogurt, vinegar, honey, Dijon, salt, and pepper
5. Pour dressing over salad and toss until evenly coated
6. Fold in cheese if using
7. Chill 30 minutes before serving for best flavor
