Description

Vibrant Beet Juice using beets, apple, carrot, lemon, and ginger. Make with a juicer or a blender, then strain for a smooth, refreshing drink.


Ingredients

Scale

2 medium beets, rinsed and trimmed

1 large apple, cored

1 medium carrot, peeled

1/2 lemon, juiced (add at the end)

1/2-inch fresh ginger, peeled

1/2 to 3/4 cup cold water or coconut water (blender method only)


Instructions

1. Rinse beets, apple, carrot, lemon, and ginger. Peel beets if skins are tough; trim tops and roots. Core the apple. Roughly chop all produce.

2. Juicer: Run beets, apple, carrot, and ginger through the juicer. Stir in lemon juice.

3. Blender: Add produce and 1/2 cup cold water to a blender; blend smooth. Add more liquid if needed.

4. For blender batches, strain through a fine-mesh sieve or nut-milk bag. Serve chilled and adjust lemon to taste.

Notes

Keep lemon for the end to keep flavors bright and avoid bitterness.

For a lighter sip, dilute with cold water or coconut water.

Refrigerate in a sealed glass jar up to 24–48 hours; shake before serving.
