Description

This strawberry spinach salad is a fresh spring recipe with strawberries, spinach, feta, pecans, and poppy seed dressing.


Ingredients

5 ounces fresh spinach

1 cup thinly sliced strawberries

⅓ cup thinly sliced red onion

½ cup toasted pecans

2 ounces crumbled feta cheese

1 recipe poppy seed dressing

Sea salt and freshly ground black pepper


Instructions

1. In a large bowl, place spinach, strawberries, and onion.

2. Add some dressing and toss to combine.

3. Top with pecans and feta, then toss gently.

4. Season with salt and pepper before serving.

Notes

You can prepare the salad base 1 day in advance. Dressing lasts up to 5 days refrigerated. Best eaten fresh after tossing with dressing.
