Description

This virgin Bellini cocktail is elegant, sparkling, and alcohol-free. Made with peach purée and bubbly sparkling water or non-alcoholic sparkling wine, it’s perfect for brunch, baby showers, and festive mornings.


Ingredients

Classic Virgin Bellini (2 servings):
2 ripe peaches, peeled and sliced
1 to 2 teaspoons lemon juice
1 to 2 teaspoons simple syrup or honey (optional)
8 ounces chilled sparkling water, sparkling white grape juice, or non-alcoholic sparkling wine

Optional garnish:
Fresh peach slice
Mint sprig
Sugar rim
Pomegranate seeds

Simple Syrup:
2 tablespoons sugar
2 tablespoons hot water


Instructions

Make the simple syrup by stirring sugar and hot water together until dissolved. Let it cool.
Add the sliced peaches to a blender with lemon juice.
Blend until completely smooth.
Taste the peach purée and add a little simple syrup only if needed.
For a silky texture, strain the purée through a fine mesh sieve.
Chill the purée well before serving.
Add about 2 ounces of peach purée to each chilled champagne flute.
Slowly top with about 4 ounces of sparkling water or non-alcoholic sparkling wine.
Stir very gently once or twice to combine without losing too many bubbles.
Garnish with a peach slice or mint and serve immediately.

Notes

Frozen peaches work well when fresh peaches are out of season.
Use sparkling water for a lighter drink or sparkling grape juice for a sweeter version.
Always chill the purée, glasses, and bubbly before serving for the best fizz.
The peach purée can be made 2 to 3 days ahead and stored in the fridge in an airtight container.
For a berry variation, blend in a few strawberries or raspberries with the peaches.
