Silky Homemade Chocolate Mousse

Description

This silky homemade chocolate mousse is rich, airy, and restaurant-worthy, yet surprisingly easy to make at home. Made with bittersweet chocolate, whipped cream, eggs, and vanilla, it is the perfect make-ahead dessert for dinner parties, holidays, date nights, or any chocolate lover.


Ingredients

6 oz (170 g) bittersweet or semisweet chocolate, 60–70% cacao, finely chopped
2 tablespoons (28 g) unsalted butter, cut into small pieces
3 large eggs, separated and at room temperature
1/4 cup (50 g) granulated sugar, divided
1 cup (240 ml) cold heavy cream
1 teaspoon pure vanilla extract
1/8 teaspoon fine sea salt
1/2 teaspoon espresso powder, optional
Optional toppings: whipped cream, berries, shaved chocolate, or cocoa powder


Instructions

Place the finely chopped chocolate and butter in a heatproof bowl. Set the bowl over a saucepan of barely simmering water, making sure the bottom of the bowl does not touch the water.

Stir gently until the chocolate and butter are fully melted and smooth. If using espresso powder, stir it in now.

Remove the bowl from the heat and let the chocolate mixture cool until just warm, about 10 minutes.

Separate the eggs, placing the yolks in a small bowl and the whites in a clean, dry medium bowl.

Whisk the egg yolks with 2 tablespoons of the sugar until slightly thickened and pale.

Slowly whisk the egg yolk mixture into the cooled melted chocolate until fully combined and glossy.

Add the vanilla extract and fine sea salt, then stir gently to combine.

In a chilled mixing bowl, whip the cold heavy cream until soft peaks form. The cream should hold a gentle peak that folds over when the whisk is lifted.

Transfer the whipped cream to the refrigerator while preparing the egg whites.

Using clean beaters, beat the egg whites on medium speed until foamy.

Gradually add the remaining 2 tablespoons of sugar and continue beating on medium-high speed until soft, shiny peaks form.

Stir about one-third of the whipped cream into the chocolate mixture to lighten it.

Gently fold in the remaining whipped cream in two additions, using broad sweeping motions.

Fold in the beaten egg whites in three additions, being careful not to deflate the mixture.

Stop folding as soon as no white streaks remain.

Spoon the mousse into small ramekins, jars, or dessert glasses.

Cover and refrigerate for at least 2 hours, or up to 24 hours, until set.

Before serving, top with whipped cream, berries, shaved chocolate, or cocoa powder if desired.

Notes

Use high-quality bittersweet or semisweet chocolate between 60–70% cacao for the best flavor and smoothest texture.

Let the melted chocolate cool before adding the egg yolks to prevent curdling.

Whip the cream and egg whites only to soft peaks. Overwhipping can make the mousse grainy or difficult to fold.

Fold gently and slowly to keep the mousse light and airy.

Chocolate mousse needs at least 2 hours in the refrigerator to set properly.

For make-ahead serving, spoon the mousse into individual glasses, cover, and refrigerate up to 24 hours.

Store leftovers covered in the refrigerator for up to 2 days.

Do not leave chocolate mousse at room temperature for more than 1 hour because it contains eggs and cream.
