Description
This fresh summer salad is crisp, colorful, and ready in 20 minutes. Made with avocado, corn, tomatoes, and a bright lemon dressing.
Ingredients
4 cups romaine lettuce
2 cups arugula or mixed greens
1 1/2 cups cherry tomatoes
1 cucumber, diced
1 cup corn kernels
1 red bell pepper, diced
1 avocado, diced
1/4 cup red onion, sliced
1/2 cup feta cheese
2–3 tbsp fresh basil
1/4 cup olive oil
3 tbsp lemon juice
1 tbsp honey
1 tsp Dijon mustard
1 clove garlic
Salt and pepper
Instructions
Whisk together olive oil, lemon juice, honey, Dijon, garlic, salt, and pepper.
Chop lettuce, cucumber, bell pepper, and tomatoes.
Add greens and vegetables to a large bowl.
Add corn, onion, and basil.
Dice avocado and add just before serving.
Sprinkle feta on top.
Drizzle dressing and toss gently.
Serve immediately.
Notes
Do not overdress the salad.
Add avocado last to prevent browning.
Store dressing separately.
Great with grilled chicken or fish.
